Spinach and Chicken Sandwich

Delicious and healthy  spinach and chicken sandwich… a nutritious meal for kids and adults as well. Wrap it up for picnics and enjoy them.

Required ingredients

  • 1/2 cup blanched spinach
  • 1/2 cup boiled and shredded chicken
  • 1/2 cup grated cheese - optional
  • 5-6 flakes of garlic - finely chopped
  • 1 medium onion - finely chopped
  • 1/2 tsp pepper powder
  • 1/2 cup finely shredded cabbage
  • 10 white/brown bread slices
  • 2-3 tbsp mayonnaise
  • 1 tsp oregano
  • Salt as per taste
  • 2 tbsp olive oil

Directions & How to

  • Heat oil in a pan, add garlic and fry till it changes color, add onion and saute it for a minute.
  • Mix spinach and chicken and cook for another 2-3 minutes.
  • Season it with pepper, oregano and salt.
  • Transfer it to a mixing bowl and let it cool for a while.
  • Add shredded cabbage, cheese( if using), and mayonnaise and mix it well.
  • Spread the prepared filling evenly on 5 bread slices and cover it with remaining slices.
  • Cut the sandwiches diagonally into halves or quarters.
  • Serve with tomato ketchup.
