About this recipe
Namakpara is a very popular savoury snack, served in every household at various occassions.
Required ingredients
- 2 cups maida (refined flour )
- ½ cup vegetable oil or shortening
- 1 tsp salt
- Cold water to knead the dough
- Oil to deep fry
Directions & How to
- Mix together maida and salt in a large bowl and sift through once, so that salt is distributed evenly.
- Add oil and mix well with your fingers. Rub the flour between your palms in portions, till it starts to resemble bread crumbs.
- Now add cold water and knead stiff dough.{ This dough will take less water as it already has oil for binding}. Cover the dough and keep it in the fridge for ½ an hour.
- Make 4 equal sized smooth balls of the dough. Roll out a big roti on a lightly floured surface. Cut into small diamond shapes. To lift the pieces run a flat knife underneath it.
- Heat oil in a wok and add namakparas and fry till golden and crisp. {The oil should not be smoking hot}.
