Aalo rassedar or curried potato is a very simple yet delicious and easy to make potato gravy. Its a very popular dish in northern India and is cooked in almost every household with, of course, lots of different variation.

Required ingredients

  • 3 large potatoes - sliced
  • 1 large onion -  thinly sliced
  • 2 large tomatoes - chopped
  • 3-4 green chillies - chopped
  • 1 tbsp ginger garlic paste
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1.1/2  tsp coriander powder
  • 1 tsp garam masala powder
  • 1/2 tsp dry mango/amchur powder
  • Salt to taste
  • 1 cup water
  • 2 tbsp oil
  • Fresh mint leaves for garnishing
 

Directions & How to

  • Heat oil in a thick bottomed pan, add onions and fry it till it turns translucent.
  • Mix in chopped tomatoes and chillies and cook till it turns soft.
  • Add ginger garlic paste, salt, chilli powder, turmeric powder and coriander powder, mix well and cook it for a minute.
  • Now add the sliced potatoes, stir well, add a cup of water or a little more and cook it covered for around 6-8 minutes or till is cooked through.
  • When almost done check the seasoning once, sprinkle garam masala powder and amchur powder. Stir well.
  • Garnish it with fresh mint leaves and serve hot  with rice or chapatis.
