Aaloo and suva paranthas. A very filling and tasty preparation for breakfast.

Required ingredients

For the dough

  • 2 cups whole wheat flour
  • 1 cup suva bhaji or dill leaves - finely chopped
  • 1 tsp carom seeds/ ajwain
  • 1/2  tsp salt
  • 1 tbsp oil
  • Water as required

For the stuffing

  • 4 medium potatoes boiled and mashed
  • 1 onion - finely chopped
  • 2-3 green chillies - finely chopped
  • 1/2 tsp black pepper powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp dry mango powder/amchoor
  • Salt to taste

Other ingredient

  • Oil for frying the paranthas.

Directions & How to

  • In a large bowl combine together flour, dill leaves, carom seeds, salt and oil. knead it into a semi  soft and smooth dough, adding required amount of  water.
  • Cover the bowl and keep aside for fifteen minutes.
  • Mix all the ingredients for the stuffing and divide it  into 8 equal portions. Shape them into balls.
  • Divide dough into eight equal portions and make 8 equal sized balls.
  • Take a dough ball, flatten it a little around 2"in diameter and place the prepared stuffing  ball in the center and bring together and pinch all the edges towards the center.
  • Seal the edges completely so that  stuffing does not come out.
  • Now flatten each ball with your palm and roll out paranthas using little flour.
  • Cook the paratha on a tava (griddle), using  enough oil till both sides are golden and crisp .
  • Repeat with the remaining dough and filling to make more parathas.
  • Serve it hot with butter, pickle and curds.
