Gajar Halwa – Authentic Style

Gajar Halwa is very popular in Northern India and widely available in sweet shops during winters. Read tips / comments to surprise your guests with this recipe even in Summers when availability of carrots is a challenge.
Required ingredients
- 750 gram carrots - red OR black
- 5 tbsp pure (desi) ghee - clarified butter
- 1 litre full cream milk
- 1 cup sugar
- 500 gram danedar khoya - whole dried milk (avoid squishy OR rock)
- Grated / Powdered pistachios
Directions & How to
- Peel and grate carrots in food processor OR with hand grater
- Heat 4 tbsp ghee in big thick bottom pan
- Add grated carrots and sauté it well till carrots are almost dry
- Add milk and cook for 8 - 10 minutes, keep stirring in between
- Add sugar and cook till milk dries out, keep stirring in between
- Add 1 tbsp ghee in another thick bottom pan and fry khoya till it turns light brown
- Mix khoya in carrot and cook for another 2 - 3 minutes, keep stirring continuously
- Serve warm with pistachios sprinkled over it.
Frying carrots before adding milk will remove moisture and extra juice and gives the ultimate authentic taste..

Wash, peel and grate the carrots and sun dry till they become absolutely dry. Store it in an air tight container for later use.
