About this recipe
Vegetarian Minestrone soup is a very hearty soup. Here’s the vegetarian and easy version of it. Very simple recipe made with simple ingredients.
Required ingredients
- 2 tbsp olive oil
- 1 small onion chopped
- ½ tsp minced garlic
- 1 small carrot chopped
- 5-6 green beans chopped
- 1 tsp dried oregano and basil leaves
- Salt and pepper to taste
- 2 cups chopped tomatoes
- 2 cups vegetable stock
- 1/4th cup kidney beans (cooked)
- 1/4th cup macaroni
Directions & How to
- Heat oil in a deep sauce pan; cook onion till softened. Add the minced garlic and sauté for few seconds.
- Add carrot and beans and cook till soft.
- Now add the tomatoes and cook on high flame till completely cooked. Stir in salt, pepper and dried oregano and basil leaves. Mix it well.
- Add the vegetable stock, kidney beans and macaroni. Cook till the macaroni has softened.
- Check seasonings and serve hot.
