About this recipe

Mughlai chicken is rich in flavours and use of ground spices and nuts make it exotic.

Required ingredients

  • 1 chicken
  • 4 tbsp clarified butter
  • 5 green cardamom
  • 1" stick cinnamon
  • 1 bay leaf
  • 2 medium onions finely sliced
  • 1 tbsp ginger garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp kashmiri red chilli powder
  • 4 tbsp ground almond paste
  • 1/2 cup cream
  • Salt to taste
  • Almond flakes to garnish

Directions & How to

  • Marinate chicken in 1 tsp ginger garlic paste and salt for 1/2 an hour.
  • Heat 2 tbsp of ghee in a pan, add chicken and fry in high heat for 5-6 minutes or till well browned from all sides. Keep aside.
  • Heat rest of the ghee in heavy bottomed pan, add whole spices and let them sizzle.
  • Add the onions and fry till golden.
  • Add ginger garlic paste, saute for 1-3 minutes. then add salt coriander, cumin , chilli and garam masala powders. Add 2 tbsp of water to avoid masala from burning. Cook till oil separates.
  • Now add the chicken mix well and cook for 5 minutes covered.
  • Add the almond paste and cook for further 5 minutes or till the chicken is completely done.
  • Switch off the heat, add cream mix well. Serve garnished with almond flakes.
