Rice cooked with fresh green peas and whole spices. This fragrant and mild spicy matar pulao is a very common delicacy in every north Indian house especially in winters. Serve it with raita and a salad for a complete and healthy meal.

Required ingredients

  • 2 cups basmati rice
  • 1 cup shelled green peas- preferably fresh or you can use frozen too
  • 2 small onion- finely sliced
  • 2-3 green chillies - chopped
  • 1 tsp cumin seeds
  • 1 tsp black pepper corns
  • 1 inch cinnamon
  • 1 black cardamom
  • 2-3 green cardamom
  • 2-3 cloves
  • 1 small bay leaf
  • 1/2 tsp vinegar
  • 3 tbsp oil
  • 4 cups of water
  • Salt as required

Directions & How to

  • Wash and soak rice for 20 minutes. Drain and keep aside.
  • Heat oil in a  large pan. Add all the whole spices, and let it crackle. Add sliced onions and cook it till it turns translucent. Add chopped chillies, green peas, vinegar and salt. Stir and cook it covered for 3-4 minutes.
  • Now add rice and fry it for a minute, pour in water and bring it to a boil. Reduce the heat, cover the pan and cook it on slow flame till the water absorbs and the rice is cooked through.
  • Serve hot with any raita of your choice.
