Curried Jackfruit brings a different flavor to your table. Jackfruit is rich in fiber and vitamins and definitely a good change from regular vegetarian dishes.
Required ingredients
- 250 g jackfruit (raw) cut in 1” cubes
- 1 medium sized onion
- 1 large tomato
- 1 tsp ginger garlic paste
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 ½ tsp mustard seeds (ground to powder)
- ½ tsp garam masala powder
- Salt to taste
- 2 tbsp mustard oil
Directions & How to
- Boil jackfruit pieces in 2 cups of water till soft but not completely cooked. Strain them and keep aside for 15-20 minutes to drain off all the water.
- In a grinder add onion, tomato, ginger garlic paste, coriander and red chilli powder and mustard. Grind to a fine paste.
- Heat oil in a wok; add the boiled jackfruit and fry on a high heat till the edges become a little crisp and brown. Strain and keep aside.
- To the same oil add the wet ground masala and cook till the oil separates. Add salt and a little water (if you want a thinner curry otherwise do not).
- Add fried pieces of jackfruit mix it well; cover and let it simmer for 5 minutes.
- Sprinkle garam masala powder and serve with your choice of roti.
