A delicious corn spinach filling…this can be used in making quesedillas, cold sandwiches, bread rolls etc.

Required ingredients

  • 1.5 cups chopped spinach
  • 1/2 cup sweet corn
  • 1 medium onion - finely chopped
  • 3-4 flakes garlic - finely chopped
  • 1 tsp pepper powder
  • 1/2 tsp cumin powder
  • 1 tsp oregano
  • Salt to taste
  • 2 tbsp olive oil

Directions & How to

  • Heat oil in a wok, add garlic and fry till it changes color, add onion and saute it for 2 minutes.
  • Add corn and spinach,  stir well and saute it for 3-4 minutes.
  • Season it with salt, pepper, cumin powder and oregano.
  • Let it cool before using.
This filling can be used in sandwiches, quesedillas, bread rolls etc. Just mix little mayonnaise and grated cheese to it for extra taste.
