1 herb fried chicken breast - you can use any leftover fried or grilled chicken too
For the dressing
2 tbsp olive oil
2 tbsp honey
1/2 tsp vinegar
1/2 tsp dijon mustard
1 tsp roasted sesame seeds
Salt and pepper as per taste
Directions & How to
Cut onion, cucumber, tomatoes, baby corn and bell peppers into thin slices.
Chop the broccoli florets into small pieces.
Cut the chicken breast into 1 inch slices.
Boil the noodles as per instruction on its package. Drain and rinse it under running water till it cools. Strain well. Spread it on a clean tray. Sprinkle some corn flour over it, mix properly and deep fry it in small batches in hot oil till light golden and crispy. Remove on absorbent paper and keep aside.
In a small bowl combine all the ingredients for the dressing and blend it well.
Arrange lettuce/salad leaves over a serving plate, arrange sliced veggies over it and spread a bed of fried noodles. Place the slices of fried chicken over it.
Pour the prepared dressing over the salad and serve immediately.
