Aaloo baigan ki sabzi is an easy and delicious side dish, specially delightful in winters
Required ingredients
- 3 medium sized potatoes
- 2 brinjals( long variety)
- 1 large tomato, sliced
- Few fenugreek seeds
- 2-3 green chillies, slit
- 1/4 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 cup chopped soya leaves
- Salt to taste
- Mustard oil
Directions & How to
- Peel potatoes and brinjals and cut in medium sized chunks.
- Heat oil in a kadhai.Add fenugreek seeds and green chillies. Sauté.
- Add potatoes and brinjals and fry well for 1-2 minutes.
- Add sliced tomato and cook for couple of minutes.
- Add turmeric , cumin powder and salt. Mix well cover and cook till potatoes are cooked.
- Add soya leaves, mix well cook for 1 more minute and serve.
