Choley.. a popular dish in almost every Indian kitchen… chilli choley is a good change from regular chola masala, fried and sauteed in a Chinese sauce, usually a hit on my party table.

Required ingredients

  • 2 cups white chick peas – kabuli chana – boiled
  • 2 tsp red chilli paste
  • 2tbsps beaten yoghurt
  • 2 tbsp oil

For Sauce

  • 2 tbsp oil
  • 10-12 flakes garlic- finely chopped
  • 2 inch piece ginger finely chopped
  • ½ tsp red chilli flakes
  • 1 large onion cut into small cubes
  • 1 large capsicum cut into small cubes
  • 1 tsp soya sauce
  • ½ tsp vinegar
  • 2 tbsp red chilli sauce
  • 1 tbsp tomato sauce
  • 3tbsp tomato puree
  • 2tbsp corn flour mixed in ¼ cup of water
  • ½ cup water
  • Salt as per taste
  • A pinch of mono-sodium glutamate - ajinamoto
  • A pinch of red food colour

Directions & How to

  • In a large pan or wok, heat 2 tbsp of oil , add the chick peas, red chilli paste and yoghurt, mix well and fry for 4-5 minutes on slow flame.

Making Sauce

  • Heat oil in a wok, add chilli flakes, garlic and ginger, when it turns golden brown add onions and capsicum and saute it for 2 minutes.
  •  Add soya sauce, vinegar, tomato puree, tomato sauce,  red chilli sauce, a little salt and a pinch of mono-sodium glutamate. Saute it for a minute and add chick peas and cook it for 2-3 minutes.
  • Now add half cup water, food colour and corn flour paste. Mix and cook further for around 2 minutes.
  • Serve hot.
