Baigan ka Bharta is a simple everyday dish. Here is simple recipe for this tasty dish.
Required ingredients
- 250 gms brinjal (round variety)
- 3-4 garlic cloves
- 2-3 green chilies
- 2 medium sized tomatoes
- 1 tbsp. chopped coriander leaves
- 1 tbsp. chopped soya leaves (dill) – optional
- ½ cumin seeds
- Salt to taste
- Oil
Directions & How to
- Char brinjal and tomatoes on open flame.
- Char garlic cloves in a pan or girdle.
- Remove skin from brinjal, tomatoes and garlic and put together in bowl.
- Mash the vegetables with a potato masher or alternatively grind in a food processor.
- Add salt, chilies, coriander and soya to the brinjal mix.
- Heat oil in a kadai and splutter cumin seeds, add the brinjal mix and cook till it leaves oil
