Mushroom Aloo Masala

Mushroom and potatoes cooked together in a wonderful blend of spices. Mushroom aloo masala can be served as a side dish or a veg main course in any meal of the day.

Required ingredients

  • 200 grams mushrooms – cut into four pieces
  • 2 medium Potatoes
  • 2 medium onions
  • 3 medium tomatoes
  • 2 green chilies - chopped
  • 2 tbsp yoghurt – well beaten
  • 4-5 flakes of garlic
  • 2 inch piece ginger – finely chopped
  • 1 tsp cumin seeds
  • 3-4 dry red chilli
  • ¼ turmeric powder
  • ½ tsp coriander powder
  • ½ tsp chilli powder
  • 1 pinch of asafoetida
  • Salt to taste
  • 2 tbsp oil
  • ½ cup water
  • Coriander leaves for garnishing

Directions & How to

  • Cut potatoes into small cubes, shallow fry and keep aside.
  •  Cut onions into halves. Boil them for 3-4 minutes. Strain.  When cool put it in a mixer blender along with garlic, cumin seeds and dry red chilies, and blend it into a fine paste, adding little water if needed.
  • Heat oil In a pan. Add a pinch of asafoetida and chopped ginger and fry it for a minute. Now add ground paste and cook it on slow flame for 4-5minutes or till the raw smell disappears. Add turmeric powder, chili powder, coriander powder and salt and sauté it for a minute.
  •  Add chopped tomatoes, green chilies and yoghurt and around ½ cup of water. Cook it covered for 3-4 minutes. Now add mushrooms and cook well. Mix in the fried potatoes and cook it covered for 2 more minutes.  Garnish with fresh coriander leaves.
  • Serve hot.
