                    This recipe is a slight variation of roghan josh, which is a very popular authentic kashmiri dish.
Required ingredients
- 500 g mutton
 - 3/4th cup thick curd
 - 2 medium sized onions finely chopped
 - 2 tbsp ginger garlic paste
 - 1 tsp kashmiri red chilli powder
 - 1 tsp dry ginger powder
 - 1 tsp garam masala powder
 - 1 tsp black peppercorns
 - 4-5 cloves
 - 4-5 green cardamoms
 - 1" stick cinnamon
 - Few mace strands
 - Salt to taste
 - 4 tbsp clarified butter( ghee)
 
Directions & How to
- Heat ghee in a pressure cooker, add peppercorns, cloves, cardamom , cinnamon and mace.
 - Add mutton and some salt and fry it till well browned.
 - Take out the mutton pieces and add onions to the ghee, fry them till golden brown.
 - Add ginger garlic paste, red chilli powder, ginger powder and garam masala powder and salt. cook till ghee separates.
 - Now add the mutton pieces back mix well, add curd and 1/4th cup of water. Put on high heat for 2 whistles and then on low heat for about 15-20 minutes.
