Zarda is  a popular muslim wedding dish, served as dessert it tastes great on any occasion.

Required ingredients

  • 2 cups polished rice
  • 2 1/2 cup sugar
  • 1/2 cup solidified milk(khoya)
  • 1/2 cup chopped nuts
  • 1/2 cup ghee
  • 2 pinch red food color
  • Juice and rind of 1 orange (optional)

Directions & How to

  • Wash and soak rice for 2 hrs.
  • Cook the solidified milk in a pan until it turns golden brown, stirring in between.
  • In a deep pan, boil rice with 4 cups water and red colour till soft but not completely cooked.
  • Drain rice and keep aside.
  • In  a heavy bottomed pan, spread half of the rice. Pour half of the ghee and sugar on the rice and some orange juice and rind. Repeat the layering with rest of the ingredients.
  • Let it cook on very low heat, stir in between with light hands till all the sugar is dissolved and rice is completely cooked. Rice grains should look soft and glossy.
  • Add the solidified milk and nuts to zarda mix lightly and serve.
