Mutton kurkure is boneless mutton strips, coated in spices and fried till crisp. Super tasty and a guaranteed hit all the time. A fun to eat snack.

Required ingredients

  • ½ kilo boneless mutton cut into 2 or 3 inches long strips
  • 3 cups water

List A

  • 1tsp Vinegar
  • 2 inch piece ginger- roughly chopped
  • 5-6 garlic flakes - roughly crushed
  • 4-5 green chilies - slit
  • Salt as per taste

List B

  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½  tsp chilli powder
  • ¼ turmeric powder
  • ¼  garam masala powder
  • ½ tandoori masala- optional
  • Salt
  • 2tbsp gram flour
  • 1tbsp cornflour
  • Oil for deep frying

Directions & How to

  • Boil mutton strips in 3 cups of water with ingredients from the list A. Boil it on medium flame for around 6-7 minutes or alternatively you can pressure cook it till 2 -3 whistles. Strain it from the stock. Discard the ginger, garlic and chilies from it and let it cool.
  • Now sprinkle on it all the spices from the list B. Mix it well.
  • In a small bowl combine the gram flour and corn flour.
  • Coat the mutton strips in it generously. If u feel the meat strips are too dry and the flour is not sticking on it properly, then sprinkle little water on it so that it enables proper coating of the flours.
  • Now deep fry the strips in hot oil till golden and crispy. * do not over crowd the pan and fry it a little at a time or in small batches for better results.
  • Serve with pudina chutney or tomato sauce.
