Fried chicken kababs… this recipe is adapted from the famous  imperial fried chicken kabab of hotel Imperial in Bangalore. Extremely soft and succulent from inside with a crisp outer covering from outside…these kababs are now pretty commonly sold in road side shops in bangalore.

Required ingredients

  • 500 grams chicken with or without bones - cut into medium sized pieces
  • Juice of a lime
  • 1 tsp ginger garlic paste
  • Salt to taste
  • Oil for deep frying the chicken

List A

  • 2 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 4 tbsp refined flour/maida
  • 4 tbsp cornflour
  • A pinch of red food colour
  • Salt to taste

Directions & How to

  • Wash and pat dry the chicken.
  • In a mixing bowl take the chicken, add ginger garlic paste, salt and lemon juice. Mix well, cover the bowl and leave it to marinate in the fridge for 4-6 hours.
  • In another mixing bowl take all the ingredients from list A and mix it well. Make a thick batter of flowing consistency by adding enough water little by little.
  • Dip each chicken piece in the batter and deep fry it in hot oil till done and crispy. *Do not over crowd the pan while frying, fry it in small batches for better results.
  • Serve hot garnished with onions rings and lemon wedges.
*For crispier chicken, heat oil to smoking point, put a few chicken pieces ( dont over crowd the pan) and fry it on a medium heat, turn once in between and once it is cooked,  increase the heat to high and fry it till it turns golden and crisp. Remove on a absorbent paper and serve hot. Always  use a small bird for this recipe, not weighing more than 1kg.
