Aaloo baigan  ki sabzi is an easy and delicious side dish, specially delightful in winters

Required ingredients

  • 3 medium sized potatoes
  • 2 brinjals( long variety)
  • 1 large tomato, sliced
  • Few  fenugreek seeds
  • 2-3 green chillies, slit
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 cup chopped soya leaves
  • Salt to taste
  • Mustard oil
 

Directions & How to

  • Peel potatoes and brinjals and cut in medium sized chunks.
  • Heat oil in a kadhai.Add fenugreek seeds and green chillies. Sauté.
  • Add potatoes and brinjals and fry well for 1-2 minutes.
  • Add sliced tomato and cook for couple of minutes.
  • Add turmeric , cumin powder and salt. Mix well cover and cook till potatoes are cooked.
  • Add soya leaves, mix well cook for 1 more minute and serve.
